Walnuts & Nuts, Sold by Weight
Also called Dry fruits, Mewa, Nut kernels, Giri
Nuts are graded on things a photograph will not show you: kernel size, the proportion of halves to pieces, and how light the kernel colour runs. A pale, unbroken half and a dark, crumbled one can come out of the same orchard in the same week, and the difference in price between them is entirely a difference in sorting.

Walnuts are graded on origin as much as on size. Kashmiri walnuts (akhrot) are thin-shelled and harvested late, and the kernels tend to run lighter and milder than most; the Californian kernels we stock are more uniform and easier to buy consistently. What is on this shelf is the Californian lot and Kashmiri almonds, each labelled for what it is — and nothing here is sold as something it is not.
Everything here is sold loose, by weight, from single lots. We do not blend a good lot into a weaker one to stretch it, which is ordinary practice in this trade and the main reason two bags of the same nominal grade can behave so differently in the kitchen.
Nuts go rancid through their oil, and they do it faster in warmth and light than most people expect. We pack in sealed, opaque bags, dispatch against the harvest rather than from long storage, and put the packing date where you can read it.
