Coupé-grade saffron from La Mancha, Spain, sold in a 2 g tin. Coupé is the Spanish trade term for stigma-only threads with the style cut away — the counterpart of Kashmiri Mongra, with a rounder, less smoky aroma and high colouring strength.
We carry it alongside our Kashmiri saffron for cooks who want the profile European recipes were written for: paella, risotto alla milanese, saffron rice and custards, where a clean colour and a mellow perfume matter more than the sharper Kashmiri note.
The tin is sealed against light and carries its lot reference. It is the same all-red cut as our Mongra; the difference is terroir, not grade, and it is priced as what it is rather than as a cheaper Kashmiri substitute.
La Mancha saffron carries a protected designation of origin, and we label it as La Mancha — not as Iranian material relabelled, and not as a stand-in for Pampore.
For paella and risotto cooks, and for anyone who wants to taste the two great saffrons side by side.

How to use and store
Toast the threads for a few seconds in a dry pan, crush between your fingers and steep in two tablespoons of warm stock or water for ten minutes before adding to rice. A small pinch is enough for a paella for four.
Sealed tin, cool dark cupboard. Use within a year of opening for the best colour.

How to judge saffron
- Saffron, kesar, zafran, kong posh: one spice, many names The same red thread is kesar in Delhi, zafran in Lucknow, kong posh in Pampore and kumkumapoo in Chennai. What the names share, where they come from, and what none of them guarantees.
- What the GI tag on Kashmir saffron actually certifies Kashmir saffron carries a Geographical Indication. It certifies less than most buyers assume, and understanding the gap is the point.
- How to use saffron threads without wasting them Most saffron is wasted at the point of use, not the point of purchase. Blooming it properly costs nothing and roughly doubles what you get from a jar.
